VALENTINE'S DAY IS O-V-A!

Another Valentine's Day has come & gone.. Here's what our days have consisted of these last four Feb-r-u-ary 14th's.
(Sorry to those of you who read my little February story, and now think of the twins every time you see the F word! Ha!)

 
Valentine's Day 2008 - Dating casually for the last couple of months.. "I usually just spend Valentine's Day with my Mom" was code for "It's way too early to be super exclusive on Valentine's Day." So we went to dinner the night AFTER Valentine's Day at Chilis or some sort of super nonchalant restaurant chain like that. I didn't care, because I was "sooo cool and didn't catch feelings quickly at all."

Valentine's Day 2009 - I got you a gift. Not a card. Not candy. It's a positive pregnancy test. Hope ya like it!

Valentine's Day 2010 - We somehow worked up the nerve to leave our perfect little 4 month old baby boy for a few hours while we went to dinner at our favorite restaurant & a movie.. so original, I know.. but it's truly our favorite thing to do together!

Valentine's Day 2011 - Ecstatic to drop our 16 month old, wild-child off for a couple of hours while we ate at our favorite restaurant and a movie.. a tradition worth keeping!


I'm totally not the type to go all cheesy on ya'll, but since it's the official "LOVE" holiday, I must go ahead and say.. I find myself praying thankful prayers these days more than I do wishful prayers. Before I met J & Cash, my prayers centered around requests or wishes, but now I feel like I owe God so much thanks for giving me all that he has. I see people who are in their 40's and 50's still looking for "The One" and although I believe there is no such thing as a perfect person, I found the one that fits the best for me. It just works. It's nice to sleep easy every night knowing that what we have is so powerful. Keyboard Excitement! ladskfjsldkfjsldkfsl

Sorry for that cheesy rant.. and now back to the regularly scheduled sassy, sarcastic, shallow & domesticated program that you're USED.. all 4 of you!
 

ALERT ALERT ALERT! I cringe when even typing this, but I feel that it's important to announce in case some of you mama's missed it. There has been a recall on the Summer Infant Video Baby Monitors, in the result of two babies dying of strangulation from the cord of this monitor. 1.7 million monitors, 40 different models, are being recalled from the Summer Infant line. If you or someone you know own this, please please, PUH-LEEZ throw this contraption in the trash and tell your friends!


On a happier note, WHO LIKES WINE?!?! Yum, yum, yum, yum. I feel like I inherited my wine addiction from my mother.. (I'm sure you're just loving that shoutout, Mom!) I'm in NO way a heavy drinker, if anything it's one every two weeks or so, but I do love, love, LOVE the taste of wine. I could drink White wine for the rest of my life and it would never get old; it's my fav! What I can't STAND, however, is going to a formal dinner/party and the wine not matching the food served. I'm here to solve your problems =) Here's the basic need-to-know Wine Pairing's, in case you plan on hosting an event any time soon.

Cabernet Sauvignon – red meats, barbequed steak, grilled and smoked foods.
Chardonnay – grilled chicken, salmon, shellfish, and grilled fish
Merlot – pasta, red meat, duck, smoked or grilled foods
Pinot Noir – light meats, chicken, grilled anything, salmon
Sauvignon Blanc – white or light fish, mild cheese, fruit
Syrah – red meats, spicy pizzas, herbed sauces on red meat, turkey
Zinfandel – tomato pasta dishes, pesto, red meats, chicken with heavy sauce


 

Since I use this blog, not only as a creative outlet but as Cash's certified PUBLIC scrapbook (he's gonna kill me one day!) I'd like to document a couple of his latest milestones now that he's the big 16 months old!



1. He drinks a sippy cup of Sugar Free Chocolate Milk every morning and eats a bowl of Cheerios while watching an old, OLD Sing Along tape. This brief description has a purpose.. trust me! Sometimes, I'll sneak around the corner and watch him while he stares wide-eyed at the screen. There's a certain point in the film where 5 young boys (that look/perform very similar to the Jackson 5) come on the screen in turquoise blue sequined suits and sing/dance to Rockin' Robin. EVERY. SINGLE. TIME this part comes up, Cash starts dancing --- ferociously. As if he's on some serious dance show hosted by Paula Abdul where his whole dancing career + a 5,000 check and a sequined leotard is on the line. He gets the most serious face, puts down his sippy cup, and breaks it down until the song is over. He then presumes watching the video as if nothing happened. Lord, help us.

2. He started staying the word "STOP!" Anytime he hears us say casual sentences such as "Stop at the gas station" or "There's a stop sign" he screams STOP! as if he's angry. Need to work on getting rid of this habit..

3. He isn't eating as much as I'd like him to lately. Just little bites here and there throughout the day, with his sippy cup constantly in hand. This could be because his 4 back teeth are coming in at the same time, but I can't help but fear that he's going to somehow detiorate into thin air while sleeping if I don't force a corndog down his throat right before he goes to bed. I'm sure he'll be alright..

4. He is RUNNING now. Not stepping, not walking. RUNNING, full blast. He's a quick one.. This freaks me out sometimes, but I'm getting used to it.

5. He climbed onto the bed on his own today. He's been climbing OFF for awhile, but it completely caught me off guard when I heard something behind me, turned around, and he was smiling in my face. Looks like if the toddler bed switch comes soon, I'm going to have a surprise visitor in the bed each morning! I wouldn't mind seeing that face first thing each day when I open my eyes.. not. one. bit.

6. He's taken on a serious love for music. This has been pretty much his entire life (mainly because we listen to music all the time) but it's now beginning to be completely on his own. He loves the sound of drumming his hands on our coffee table, and loves to see people snap their fingers and attempts to replicate. My dad sent me a picture while we were out for dinner tonight of Cash sitting at the grand piano in their house just goin' to town. He said Cash spent alot of time there, and would play one single high note, and then a bunch of notes together. My dad says it's a normal thing, but I'm convinced he's a Baby Maestro.


 

I don't post enough Mexican food recipes, and this one is one of my favs! They are the creamiest & most mouth watering enchiladas you will EVER have. (Unless, by chance, you're not a fan of sour cream. If this is the case, you probably don't belong on this blog. Because sour cream is bomb.com)



SASSY SOUR CREAM ENCHILADAS:

NEED:
- 12 whole Corn Tortillas
- 2 lb. cooked chicken breasts, shredded.
- Canola Oil, For Frying
- 1 can (20 Ounce) Enchilada Sauce (any brand will do!)
- 2 cups Sour Cream
- 3 cups Sharp Cheddar Cheese, Grated
- 1 cup Sliced/chopped Green Onions
- ½ teaspoons Ground Cumin
- ¼ teaspoons Cayenne Pepper (1/2 if you're brave!)

STEPS:
1. Preheat oven to 375 degrees.
2. Mix together sour cream, chicken, green onions 1 1/2 cups grated cheddar, cumin, and cayenne pepper.
3. Heat canola oil in a skillet over medium heat. Heat enchilada sauce in a separate skillet or saucepan.
4. Using tongs, fry tortillas one at a time, for only about five to ten seconds per side (don’t allow to crisp.) Remove from oil, then dunk tortilla in enchilada sauce.
5. Lay tortilla on a plate, then spoon a good two or three tablespoons of the sour cream/chicken mixture in the middle.
6. Roll tortilla, then place face down in a 9 x 13 inch baking pan. Repeat with remaining tortillas and sour cream/chicken mixture.
7. Cover the dish with the remaining cheese, then bake for 15 to 20 minutes until bubbly.
