BACHELORETTE & CRAWFISH ALFREDO

On Saturday, I went out with some of the girls for my sweet friend Melissa's Bachelorette Party..


Melissa is the pretty lady in the tiara, and I am honored to be a bridesmaid in her wedding March 19th of this year! I'm also throwing her a "Tiffany's" Inspired Bridal Shower next month that's sure to be the cutest thing around ;) The Bachelorette Party was a TON of fun.. In fact, maybe a little TOO much fun. 95% of the ladies there were mama's, and we definitely let loose that night. We danced like crazy, laughed, cried, and made a complete mess of ourselves.. Somehow we ended up on a taxi without a middle seat, so half of us sat on the floor. I'd like to officially label that taxi the "Hot Mess Express", because that is ultimately what it was. I'm a firm believer in the occasional, and VERY infrequent night out on the town with the ladies.. And when the bride to be is drinking champagne like this...



...you KNOW it was an eventful time!
I didn't snap as many pictures as I'd like, but I DID manage to get this particular shot. I can never fully comprehend why these things happen to me.. It's as if God is purposely placing these random moments in my life JUST so I can blog about them and entertain you guys. Enough of a preface.. I introduce to you.... A woman.. in the club.. WITH ROLLERS IN HER HAIR!



Yes, that really happened. If you know this woman or are any way related to her, please stop her from letting this happen again. YIKES!

Aside from my other New Year's Resolutions, one personal goal I plan to uphold is to savor each daily moment a little more.. I enjoy every second with my little man (don't get me wrong) but as Cash is growing so quickly, I sometimes forget to take the time to step out of the "routine" of things and really just linger in each little thing he does. Tonight I took a little longer than usual during his nightly Potty & Bath Time tonight, and play a little more with my sweet boy. If you can relate to this particular resolution, I hope ya'll make it a point to do the same! Here's a few shots of my little brown naked cutie patootie during Potty & Bath Time.. THESE are the pictures he will strongly dislike me for when he's a Senior in high school.



 
For those of you like me that are fans of all things spicy & pasta, THIS is your dish! It reminded me a lot of the Cajun Chicken Pasta from Chili's only 50 thousand times more fabulous. I made it up tonight when I wanted to cook something with Penne noodles & I must say, not only was it ridiculously easy, but one of the best dishes I've made in a loong time. It would also be yummy with fresh mushrooms cooked in. Try this one out.. & let me know how it turns out! I love love SUPERLOVE hearing feedback from my recipes.. xo

CRAWFISH PENNE ALFREDO

NEED:
- Crawfish Tails
(Fresh crawfish is NOT necessary. I bought a bag of frozen crawfish tails in a bag at the frozen seafood section of Walmart, and it was JUST the right amount. They tasted AS GOOD as fresh, and thawed out in only 4 minutes flat soaking in water.)
- Crawfish Boil Seasoning (I used TexJoy)
- 1 can Ragu Classic Alfredo Sauce
- 1 box Penne Noodles (Get the GreatValue from Walmart! I swear by them & they're the cheapest..LOVE!)
- 1 can Cream of Mushroom soup
- 1 tsp Minced Garlic
- 1 tblsp. butter
- Fresh lemon
- Dash of hot sauce
- Tony Chachere's Creole Seasoning
- Salt & Pepper

STEPS:
- Boil Penne noodles in salted water as directed on box.
- Thaw crawfish, rinse thoroughly until completely clean & transfer to clean bowl. Season with Crawfish Boil Seasoning, and half of a fresh lemon. Toss.
- Melt butter on medium high heat in a large saucepan and add minced garlic. When melted, add crawfish to butter/garlic mixture.
- When the crawfish begin to turn red (approximately 3 minutes) add HALF of a can of Cream of Mushroom. Sprinkle entire mixture with Tony Chachere's and S&P. Heat until all ingredients are combined to a smooth, creamy consistency and remove from heat.
- When noodles are Al Dente (cooked but with still a little "bite"), drain all water.
- Add Crawfish Mixture & can of Alfredo Sauce to the pot of noodles and combine.
- Enjoy!
